VINIFICATION |
The grapes are selected manually in the vineyard and placed in the cellar in boxes of maximum 18-20kg to avoid crushing the berries. After being destemmed and pressed, the must and the skins follow the traditional white vinification in stainless steel tanks at a controlled temperature. Post fermentation follows racking and a long period of maturation on the fine lees with repeated batonnage. The sparkling process takes place in autoclave tanks for a period of 80 days.
